During my last trip Morocco, my friend and I went on a road trip through the High Atlas Mountains on our way to stay overnight in the desert. During a late afternoon food stop in what appeared to be a butcher’s town we sat down to have tagine – essentially a roast made in a clay pot. I was invited into the kitchen to see how the chef cooks the tagines so quickly but how they stay savory and juicy. Watch the three minute below to see what the inside of the kitchen is like, get a close up of this boiling savory dish and the beverage served with it.
