Inside a Tagine Restaurant

During my last trip Morocco, my friend and I went on a road trip through the High Atlas Mountains on our way to stay overnight in the desert. During a late afternoon food stop in what appeared to be a butcher’s town we sat down to have tagine – essentially a roast made in a clay pot. I was invited into the kitchen to see how the chef cooks the tagines so quickly but how they stay savory and juicy.
